Eggless Mango Milk Cake, a sweet sensation in many parts of the world, especially in South Asia. Countries like Pakistan, Bangladesh, and India adore this dessert for its tropical twist.
There are many other recipes of Eggless Mango Cake but here I will share a quick and delicious recipe with you. Follow all the steps.
INGREDIENTS FOR VANILLA SPONGE
1. 1 Cup Milk
2. 70 gram or 1/3 Cup Butter
3. 2 teaspoon Vinegar
4. 1 teaspoon Vanilla Essence
5. 1/2 Cup Powder Sugar
6. 1 Cup Refined Flour
7. 1/2 teaspoon Baking Soda
8. 1 teaspoon Baking Powder
INGREDIENTS FOR MANGO FLAVOR MILK
1. 2 Cup Milk
2. 1/2 Cup Condensed Milk
3. 1/2 Cup Fresh Cream
4. 1 fresh and ripe Mango
TOPPINGS
1. Mango
2. Whipped Cream
RECIPE
1. Begin by mixing lukewarm milk with Vinegar in a bowl. Gently stir the mixture and let it sit for 2-3 minutes to allow the ingredients to meld together.
👉 Vinegar will work to achieve a softer cake
2. Next, whisk together melted butter and Vanilla essence in milk until the mixture is silky smooth and lump- free.
3. Place a sieve and sift together refined flour, powdered sugar, baking soda, and baking powder over the bowl. Ensure a well combined and airy texture.
👉 Do not over-whisk the batter. Whis until it reaches a silky smooth consistency, free of lumps.
4. Pour the batter into a non-stick pan and gently tap it to release any trapped air bubbles.
5. Cover the pan with a lid, sealing the steam vent with a small piece of aluminum foil to trap the heat.
Cook over extremely low heat for 15 minutes.
6. Meanwhile, blend diced mangoes with 2 cups of milk, adding a few ladles at a time, untill smooth.
7. Strain the mixture and combined it with the remaining milk, fresh Cream, and condensed milk. Stir well to create the mango-flavored milk.
👉 Mango flavoured Milk is ready.
8. After 15 minutes of cooking, turn off the heat and let the cake rest for 10-15 minutes.
9. Check the doneness by inserting a toothpick; if it comes out clean, the sponge is ready.
10. Now let the sponge completely cool.
11. Gently lift the sponge onto a large plate or cutting board using a spatula. Divide it into 6-8 equal pieces and create holes using a fork.
12. Drizzle the Mango -flavored milk over the sponge, ensuring even coverage, including the edges and sides.
👉 Reserve the remaining milk for serving.
14. Refrigerate the sponge, covered, to allow it to absorb the milk.
15. Prepare the toppings by chopping fresh mango and whipping cream.
16. Once hilled and set, garnish with mango pieces and whipped cream.
👉 Serve each slice with a generous pour of the reserved mango-flavored milk. Delectable eggless Mango cake is ready to eat. Enjoy.
