Korean Fried Rice

 Korean fried rice, also known as "Bokum-bap" in Korean, is a popular street food in South Korea made by stir-frying cooked rice with various ingredients like vegetables, meat and kimchi, a traditional Korean side dish made from fermented vegetables, typically cabbage or radishes, seasoned with chili peppers, garlic, ginger, and other spices. 



The dish is often served as a side or a main course and is known for its bold flavors and spicy kick. There are many recipes of Korean Fried Rice but here I will share a unique and easy recipe for you. Follow al the steps below.


INGREDIENTS FOR KIMCHI 


1. 1 medium Cabbage


2. Salt to taste


3. 12-15 Dry Kashmiri Red Chili 



4. 4-5 Garlic Cloves


5. 1/2 inch Ginger


FOR RICE FLOUR SLURRY


1. 1/4 Cup Water


2. 1.5 table spoon Rice Flour



3. 1/2 teaspoon Sugar


4. Salt to taste


BOILING RICE


👉 2 Cup Rice


 ðŸ‘‰ Salt to taste


👉 Water as needed


INGREDIENTS FOR FRYING RICE


1. 1.5 table spoon Oil


2. 2-3 Garlic Cloves


3. 1 Inch Ginger



4. 3 Chopped Baby Corn


5. 10-12 Button Mushrooms


6. 2 teaspoon Light Soya Sauce


7. Prepared Kimchi


8. 2 teaspoon Tomato Ketchup


9. Cooked Rice


10. Salt to taste


11. 1/4 cup Spring Onion Bulb



12. 1/4 teaspoon Toasted white Sesame Seeds


RECIPE OF KIMCHI


1Now pull the cabbage leaves towards back and itself it will removed. Cut the stem, it will open up. Now cut it into bigger chunks. 


2Cut the regular cabbage in the same way.


👉 We  can use regular cabbage instead of Napa Cabbage, if not available.


3Cut the Radish into thin roundles. We also can cut into long sticks


4Cut the Carrots similarly. Add them with the cabbage and Radish. 


5Cut the bulb of Spring Onion into halves, and cut  the rest of green part in finger size. Mix with other vegetables. 



6Add Salt and rest the vegetables for 1 hour. 


7After 1 hour vegetables will release their water because of Salt. Now we have to wash the vegetables under running water.  


8Squeeze all the vegetables and add them into a container. 


9Add water and rice flour into a pan and give  quick boil. After boil the water will become thick, and a slurry will be prepared. Let it cool for 1 minute. 



👉 Vegetables will release its water again and again, and the sauce and chili paste is also runny, so to bind them altogether, we have to add a slurry into it. 


10Now add red chili paste over the vegetables. 


11Add soya sauce and roasted Sesame Seeds to it.


12Add Rice Flour Slurry to it and mix well. 


Leave it for 1-2 days, its flavor will become more good. Enjoy Kimchi with your favorite dish, it will give an awesome  combination to your food. 


RECIPE OF CHILI PASTE


1. Firstly we make chili paste. We have to kept soaked dried chilies for 1 hour in water, they will risen-up nicely.


 2. Add these soaked red chilies in a pan with its water. Then add Garlic, Ginger and let it boil.


3Cook the chilies well enough that all the water is reduced.  Turn off the flame and let it cool.


4Add these chilies, Garlic and Ginger into a grinder. Add Vinegar, Tomato ketchup, Sugar and grind well.



👉 Normally tomato ketchup is not added to Kimchi only Fish Sauce is added. But if Fish Sauce is not available then we can use tomato ketchup instead of Fish Sauce.


BOILING RICE


1. In a wok, boil water an add Salt. 


2. Add Rice and cook until it's 80% done. 



3. Strain and let it cool down.


👉 This helps the Rice prevent from becoming sticky, making it easier to toss later.


RECIPE OF FRYING RICE


1. in a pan, add a little oil and sauté the chopped Garlic Ginger in it.


2. At the same time, add the sliced mushrooms  and sliced baby corns to it. Sauté for 20-30 seconds.



3. Add Soya Sauce and Kimchi to it. 


👉After adding the Kimchi, you should immediately pour rice over it, without cooking it. So the cabbage doesn't become mushy and unappetizing.




4. Now, after adding the rice, keep tossing the rice occasionally, letting it cook for a bit, then toss, and toss again.



5. Add Salt and chopped spring Onion to it. 



6. Cook on low heat for 60-70 seconds, then serve it in a bowl. Your delicious Korean Fried Rice with kimchi is ready! 😋
